I spent a month as an intern in Guatemala during grad school. The hardest but possibly most eye opening and educational part of the trip was the home-stay experience. This is the first meal my home-stay mother made me. Chile rellenos (stuffed peppers), ropollo morado (a funky red cabbage and beat dish) and arroz (rice).
